Ciabatta Bread

This is very similar to the basic bread recipe, you just work it a little different
1 1/2 cup water 110 degrees
1 1/2 tsp yeast
1 1/2 tsp salt
1 tsp sugar
1 tbs olive oil
3 1/4 cups bread flour

Combine warm water sugar and yeast let proof until a good foam starts
( actually do this in my mixer bowl, I just warm it up with hot water first)

I use a Kitchenaid mixer and dough hook to mix
add water yeast mix to mixing bowl , add salt and olive oil and slowly add flour
knead for a couple of minutes, this is a very sticky dough
turn out onto a floured surface and let rest for 15-20 minutes
punch down and divide in half
On a baking stone or parchment paper covered sheet form into 2 - 3 x 14 loaves
let rise 45 min to 1 hour
bake in preheated oven set at 425 for 25-30 minutes
Every 5 minutes spray bread and oven with a water mist
Do not spray on electric heating element
