Rainbow trout, and the wife baked them. It isn't as good as fried crappie, but it was pretty good , especially since i haven't had any good fish out here at all.

I like baked crappie every once in a while but prefer it fried
If you need to eat baked fish for health's sake but like fried, try the recipe where you put pecans or walnuts on the fish. I would have to search to find the recipe, but I remember it has nuts and mustard in it. It is not quite fried fish, but it is a very close second.

The baked trout was good, but like a said it wasn't "fried crappie good" :)

I smoked some filets and one whole trout this eve on a pellet smoker, and after eating the whole smoked trout, I will now keep every last small one whole for the smoker.. It was good !
