Vanilla Pound Cake

1cup butter... best if you use real salted butter

1 1/2 cup sugar

4 large eggs... I use fresh home grown eggs!!

1/4 cup milk

2 Teaspoons real vanilla... I use Mexican

2 1/4 cup all purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

(you may substitute self rising, but leave out the baking powder and salt)

Preheat oven to 325. Grease a thick cake pan

Beat the butter with an electric mixer on medium until creamy... the whole key to this cake is beating it good at each step.

Add the sugar a little at a time, beating good after each add.

Add eggs one at a time, beating after each. The mixture will be light and fluffy

Beat in the milk and vanilla

Combine the flour, baking powder and salt. Add the flour mixture to the butter mixture and beat at low speed until just mixed.

Pour into the prepared pan.

Bake until a toothpick inserted in the center comes our clean. About 1 hour and 15 minutes. Place the pan on a wire rack to cool. Remove from pan and finish cooling on the wire rack.

In my oven it does not take but about an hour to cook so be sure to check and adjust your baking time to your oven.
